Under EU GDPR Data Protection Rules - customers have the right to be forgotten and have their personally identifiable information removed from your system.

To remove a customer from the system we obfuscate the customers personally identifiable information, and archive their account, we do this because we still need to count the customers bookings in reports etc. This is a one way process and cannot be undone!
